Six houses · three language regions
The garden first, then the plate.
Every Salvia has its own garden and a farm nearby that sows for that house alone. 60 per cent of our menu does without meat and fish — and whatever comes with them carries its origin on the menu.

Season menu
Five courses of whatever is growing now
New four times a year, in the evening in all six houses, for CHF 118.00 — entirely vegetarian or vegan if you like, with Swiss wines or an alcohol-free pairing from the garden.
What people come for

Risotto alla salvia, Zincarlin
CHF 36.00
Our dish since day one — and since Locarno, made with Ticino rice and Zincarlin, a fresh cheese from the Valle di Muggio.

Sage leaves in tempura batter, mountain salt
CHF 9.00
The herb we are named after — fresh from the garden, fried in seconds.

Whole roasted celeriac, hazelnut, apple, mustard seed
CHF 34.00

The first bed is called sage
On the Plan of Saint Gall, drawn around 820, the herb garden lies beside the kitchen garden. Whoever enters it first sees a bed labelled ‘saluia’. Cooking and healing were one craft there — hence our name, and hence our first house in St. Gallen.
82 per cent of our vegetables grow less than forty kilometres from the house where they are cooked.
